Mine, although it was new, was ex-display, and only came with a manual.

So, what software and disks came with it?

Depends on when you would have bought it... late in production they came with loads of libraries, EOS link, etc. Early adopters didn't get nearly as much... the software they came with would have varied on when exactly it left the factory so it's hard to say for sure. Right now you should just be looking for anything you can get...
