It's very very easy.
Assuming you have Logic 5 or higher:
First, set up what you want to automate in the Emu like this:
Go to Master->MIDI->Cntrls2. You'll see MidiA-H, with cc#s assigned to them. You can change the cc's here if you like...
Then go to Preset Edit->Cords, and set up a MIDI source to whatever destination you like. For Example: MidiA->FltFreq->100%. This will set you up so that MIDI A (which is CC21 by default) will control Filter Cutoff 100%
Now, in Logic, select the MIDI channel that corresponds to your preset in the EMU, and select View|Track Automation.
You'll see the track expand, and three boxes underneath the track name. Click and hold in the top of the three boxes, and you'll get a menu with MIDI controllers 0-127. Select the one you want, and start drawing in your automation. In the example above, you'd select MIDI controller 21 to match MIDI A in the Emu. That's it.
If you mean recording knob movements and such, that's slightly different, but not much - let me know if that's what you meant.
